Luscious white chocolate chips are paired with tangy lemon juice and zest in these irresistible bar cookies.
Ingredients:
  • 1.25 cups all-purpose flour, divided
  • 1 cup white sugar, divided
  • 0.33333334326744 cup butter, softened
  • 0.75 cup white chocolate chips
  • 2 eggs, slightly beaten
  • 0.25 cup lemon juice
  • 2 teaspoons lemon zest
  • 1 cup confectioners' sugar
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect baking temperature.
  • Combine 1 cup of flour and 1/4 cup of sugar in a bowl. Use your hands to incorporate the butter into the mixture until it forms coarse crumbs. Press the mixture into the bottom of a 9-inch square baking dish.
  • Bake until the crust is golden and crispy, approximately 15 minutes in a preheated oven.
  • Generously scatter the chocolate chips onto the crust.
  • In a bowl, whisk together eggs, lemon juice, and lemon zest until well combined. Mix in the remaining 1/4 cup flour and 3/4 cup sugar until smooth. Pour the mixture over the chocolate chips and crust.
  • Continue baking until the center is firm, for about an additional 15 minutes. Allow cooling slightly in the baking dish placed on a wire cooling rack. Dust with confectioners' sugar over the bars and let cool completely before cutting to serve.
