White Chocolate Macaroon Cookies

Indulge in coconut-infused sugar cookies with white chocolate, drizzled with more white chocolate and colorful sugars for a festive touch.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1 cup flaked coconut
  • 1 2/3 cups white vanilla baking chips
  • 1/2 teaspoon coconut extract
  • 1 teaspoon shortening
  • Betty Crocker™ red and green decorating sugars
  • Coarse white sparkling sugar
Instructions:
  • Preheat the oven to 375°F. Combine cookie mix, butter, egg, coconut, 1 cup of baking chips, and extract in a large bowl until a dough forms. Spoon rounded teaspoonfuls of dough onto an ungreased cookie sheet, placing them 2 inches apart.
  • Bake for 9 to 11 minutes until golden brown on edges. Allow to cool for 1 minute on the cookie sheet before transferring. Cool completely for about 20 minutes before serving.
  • Place the remaining 2/3 cup of baking chips and shortening in a small microwavable bowl. Microwave on High for 30 to 60 seconds until the mixture can be stirred smooth. Drizzle the melted mixture over the cookies and sprinkle with sugars to your liking.
