Indulgent white chocolate pumpkin spice muffins, ideal for autumn days.
Ingredients:
  • 1.5 cups all-purpose flour, sifted
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup pumpkin puree, or as needed
  • 0.33333334326744 cup vegetable oil
  • 0.33333334326744 cup milk
  • 1 egg
  • 0.25 teaspoon lemon extract
  • 0.75 cup white chocolate chips
  • 1 tablespoon all-purpose flour
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and neatly line 9 muffin cups with paper liners.
  • In a large bowl, combine 1 1/2 cups sifted flour, white sugar, brown sugar, pumpkin pie spice, baking powder, and salt. In another bowl, mix pumpkin puree, vegetable oil, milk, egg, vanilla extract, and lemon extract.
  • Combine the pumpkin puree mixture with the flour mixture and gently mix until batter is just combined.
  • Coat white chocolate chips with 1 tablespoon of flour by stirring together in a bowl. Fold coated chips into the batter and spoon into prepared muffin cups.
  • Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, for about 15 to 20 minutes.
