Ingredients:
  • 100g slivered almonds
  • 170.00 gm desiccated coconut
  • 83.33 gm thickened cream
  • 180g white chocolate melts
  • 40.00 ml coconut-flavoured liqueur (like Malibu)
Instructions:
  • Preheat your oven to 180°C while you prepare a baking tray lined with baking paper.
  • Spread the nuts on a baking tray and bake until golden, about 5 minutes. Then, pulse them in a food processor until finely chopped.
  • Evenly distribute coconut on a baking tray and bake until it turns light golden and toasted, for about 3 to 4 minutes. Take out of the oven and let it cool.
  • In a heat-proof bowl, warm the cream over a saucepan of simmering water. Stir in the chocolate until melted and smooth. Take off the heat and mix in the liqueur, nuts, and 1/2 cup of coconut. Chill for 3 hours until firm. Roll into balls.
  • Prepare a tray lined with baking paper. Place the leftover coconut in a small bowl. Roll the balls in the coconut until fully coated. Place them on the tray and chill in the refrigerator until you're ready to enjoy them.
