Indulge in decadent chocolate truffles, coated in sweet coconut.
Ingredients:
  • 12 oz white chocolate baking bars or squares, chopped
  • 2 tablespoons whipping cream
  • 1 tablespoon dark rum
  • 1 cup flaked coconut
Instructions:
  • In a 2-quart heavy saucepan, gently heat 8 oz of white chocolate, whipping cream, and rum on low heat. Stir constantly until the chocolate is smooth. Take off the heat and transfer to a small bowl. Cover the mixture with plastic wrap and refrigerate for about 2 hours until firm.
  • Prepare a cookie sheet by lining it with waxed paper. Scoop spoonfuls of the white chocolate mixture, shape into 1-inch balls, and place them on the cookie sheet. Chill in the freezer for 15 minutes. Preheat oven to 350°F. Toast coconut in a shallow pan for 5 to 7 minutes, stirring occasionally until golden brown.
  • Microwave the remaining 4 oz white chocolate in a small microwavable bowl uncovered on High for 45 to 60 seconds, stirring once, until softened and smooth. Crush coconut slightly by placing it in a resealable food-storage plastic bag or between sheets of waxed paper and using a rolling pin. Dip each truffle in melted white chocolate, then coat with coconut in a shallow dish. Refrigerate on a cookie sheet for 10 minutes until firm. Store covered in the refrigerator.
