1. Melt cream and chocolate in the microwave-safe bowl on Medium-High for 2 minutes, stirring every minute until smooth. 2. Melt chocolate in the microwave-safe bowl on Medium, stirring every minute until smooth.
Ingredients:
  • 60ml (1/4 cup) thickened cream
  • 2 x 180g pkt good-quality white chocolate, finely chopped
  • 2 tsp Malibu liqueur
Instructions:
  • In a medium heatproof bowl, combine the cream and half of the chocolate. Set the bowl over a saucepan with simmering water, ensuring the bowl doesn't touch the water. Stir occasionally with a metal spoon until the chocolate is melted and the mixture is smooth. Remove from heat, mix in the liqueur, cover with plastic wrap, and chill in the fridge for 1 hour until firm enough to shape into balls.
  • Cover a tray with non-stick baking paper. Scoop out 1 1/2 teaspoons of the chocolate mixture with a teaspoon, roll into a ball with your hands, and place on the tray. Repeat for the rest of the chocolate mixture. Chill in the fridge for 15 minutes until firm.
  • In a medium bowl, melt the remaining chocolate over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Use a metal spoon to stir gently for about 4 minutes, until the chocolate is smooth. Remove from heat.
  • Prepare a tray lined with non-stick baking paper. Dip each truffle into the melted chocolate using two forks to coat evenly. Gently tap the fork on the bowl to shake off any extra chocolate, then place on the lined tray. Repeat with the rest of the truffles. Let them set for 30 minutes.
