Indulge in decadent white chocolate truffles with a coconut twist for the perfect holiday treat.
Ingredients:
  • 2 x 220g pkts good-quality white chocolate, coarsely chopped
  • 80ml (1/3 cup) thickened cream
  • 20g (1/4 cup) desiccated coconut
  • 40.00 ml Malibu coconut liqueur
  • 375g pkt white chocolate melts
  • Shredded coconut, to decorate
Instructions:
  • Set up a makeshift double boiler by putting chopped chocolate and cream in a heatproof bowl over a saucepan with simmering water, ensuring the bowl doesn't touch the water. Use a metal spoon to stir until the chocolate is melted and the mixture is smooth. Add desiccated coconut and Malibu, then chill in the fridge for 4 hours.
  • Prepare a tray lined with non-stick baking paper. Roll 2 teaspoons of chocolate mixture into a ball and place it on the tray. Repeat with the rest of the chocolate mixture. Chill in the fridge for 1 hour or until firm.
  • Place the white chocolate melts in a heatproof bowl over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon until the chocolate is melted and smooth.
  • Prepare a tray with non-stick baking paper. Divide the truffles into 4 portions. Take out one portion from the fridge. Using a fork or a truffle dipper, coat each truffle individually in melted chocolate. Tap the fork or dipper to remove any excess chocolate. Place on the tray and sprinkle shredded coconut on top before the chocolate hardens. Repeat with the remaining truffles, melted chocolate, and coconut. Let the truffles set for 10 minutes.
