White Chocolate-Cream Cheese Fruit Tart

Golden crust filled with white chocolate & cream cheese, topped with fresh fruit & sweet glaze. Perfect party dessert.
Ingredients:
  • 0.75 cup butter, softened
  • 0.5 cup confectioners' sugar
  • 1.5 cups all-purpose flour
  • 1 (12 ounce) package white chocolate chips, melted and cooled
  • 0.25 cup heavy cream
  • 8 ounces cream cheese, softened
  • 0.5 cup white sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons corn syrup
  • 2 cups fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
Instructions:
  • Heat your oven to a toasty 300 degrees F (150 degrees C) and generously grease a 12-inch tart pan.
  • Cream butter and confectioners' sugar in a bowl with an electric mixer until fluffy. Add flour and mix until crumbly. Press mixture into the tart pan.
  • Bake the crust until it turns a light golden brown, for about 25 to 30 minutes. Allow it to cool completely before proceeding.
  • Combine smooth melted white chocolate and heavy cream in a bowl, then mix in cream cheese until fully blended. Spread this luxurious mixture over the cooled crust and refrigerate for 30 minutes to set.
  • In a saucepan, bring 1/2 cup water and white sugar to a boil. Combine remaining 1/2 cup water with cornstarch in a bowl until dissolved; add to the sugar mixture. Cook and stir until the mixture thickens and clears, about 5 minutes. Stir in corn syrup and bring back to a boil. Remove the glaze from heat and let it cool for 10 minutes.
  • Place a beautiful assortment of strawberries, blueberries, and raspberries on top of the creamy layer of cheese, then generously brush with the delectable glaze. Refrigerate for a minimum of 1 hour and keep stored in the fridge until you are ready to indulge.
