Delicious pistachio thumbprint cookies with white chocolate citrus filling - perfect for Christmas or any celebration!
Ingredients:
  • 1 cup butter, softened
  • 0.25 cup white sugar
  • 0.5 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 (3.4 ounce) package instant pistachio pudding mix
  • 2 cups white chocolate chips
  • 0.25 cup whole milk
  • 1 tablespoon grated orange zest
  • 2 ounces roasted, salted pistachios, finely chopped
Instructions:
  • In a large bowl, mix together butter, sugar, egg yolks, and vanilla extract until well combined using an electric mixer. Add flour, salt, and pudding mix, and beat until smooth. Refrigerate dough for 30 minutes.
  • Preheat the oven to 325°F (165°C) and prepare a baking sheet by lining it with parchment paper.
  • Roll the dough into 1-inch balls and arrange them on the baking sheets. Use your thumb to create an indentation in the center of each cookie.
  • Bake in the preheated oven for 10-12 minutes until lightly golden. Then, cool on a wire rack for about 30 minutes after removing from the baking sheet.
  • In a microwave-safe bowl, mix white chocolate chips, milk, and orange zest. Microwave for 1 1/2 minutes, stirring every 30 seconds, until the chocolate is melted and silky.
  • Transfer the white chocolate mixture into a piping bag, then use it to fill the center of the cooled cookies. Top with chopped pistachios for a delightful finish.
