Fluffy white chocolate raspberry scones with a crispy top, perfect for breakfast!
Ingredients:
  • 2 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 6 tablespoons frozen butter
  • 0.75 cup fresh raspberries
  • 0.33333334326744 cup white chocolate chips
  • 0.75 cup plain yogurt
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon lemon zest
  • 1 tablespoon confectioners' sugar, or to taste
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a baking sheet.
  • In a large mixing bowl, combine flour, sugar, baking powder, and baking soda. Add grated frozen butter and mix well to prevent clumping. Gently fold in raspberries and white chocolate chips. Stir in yogurt, egg, vanilla extract, and lemon zest until just combined, being careful not to overmix.
  • Transfer the dough to a floured surface and use a large biscuit cutter to cut out scones. Arrange them on the baking sheet.
  • Bake in the preheated oven for 18-20 minutes until golden. Then, sprinkle the tops of the scones with confectioners' sugar.
  • Preheat the broiler with the oven rack positioned 6 inches from the heat source.
  • Broil scones in the hot oven for about 30 seconds until the sugar melts. Allow them to cool before indulging in their sweet perfection.
