Air fryer white chocolate and raspberry scones recipe

Fluffy scones made in the air fryer: quick, crispy outside, soft inside in under 25 minutes!
Ingredients:
  • 300g (2 cups) self-raising flour
  • 40g butter, chopped
  • 60g white chocolate, chopped
  • 185ml (3/4 cup) milk, plus 1 tbsp extra
  • 60g (1/2 cup) frozen raspberries
  • Whipped cream, to serve
  • Icing sugar, to dust
Instructions:
  • In a large bowl, gently mix the flour and butter using your fingertips until it resembles fine breadcrumbs. Add the white chocolate and create a well in the center.
  • Pour the milk into the flour mixture, then use a flat-bladed knife to stir until nearly mixed. Add the raspberries and gently fold them in. Transfer the dough onto a lightly floured surface, bring it together, and gently knead until smooth. Press the dough into a 2cm-thick disc. Use a 5cm-diameter round pastry cutter to cut out 12 rounds from the dough, ensuring to cut them as close together as possible.
  • Prepare the air fryer by lining it with baking paper and making small holes for proper air circulation. Arrange the scones closely together in the air fryer and gently brush the tops with milk. You may need to do this in batches, depending on the size of your air fryer.
  • Place the scones in the oven set at 180C and bake for around 12 minutes or until they have beautifully risen and turned a lovely golden color.
  • Sprinkle scones with powdered sugar and enjoy with whipped cream.
