Indulgent cookies with a perfect blend of milk and white chocolate, reminiscent of Top Deck chocolate. Best baked from frozen dough for ultimate convenience and irresistible texture: crunchy on the outside, fluffy inside.
Ingredients:
  • 150g butter, at room temperature
  • 155g (3/4 cup) caster sugar
  • 2.20 gm vanilla extract
  • 300g (2 cups) plain flour
  • 120g white chocolate, coarsely chopped
  • 120g milk chocolate, coarsely chopped
Instructions:
  • In a bowl, use electric beaters to whip together butter, sugar, and vanilla until light and creamy. Mix in the egg until fluffy. Gently fold in the flour and baking powder until just combined.
  • Combine white and milk chocolate in the dough until a soft dough forms. Place dough on a large piece of baking paper. Roll into a 24cm long log, then wrap the paper tightly to seal, twisting the ends. Freeze for up to 3 months.
  • 1. Thaw the biscuit dough at room temperature for 30 minutes. Slice it into 1cm-thick pieces. 2. Line the air fryer basket with baking paper and arrange a few dough slices with room to spread. 3. Air fry at 150C for 18 minutes until golden and cooked. 4. Transfer the cookies to a wire rack using the baking paper and allow them to cool completely. 5. Repeat the process with the remaining dough.
