Air Fryer Fish Sticks

Upgrade frozen fish sticks with homemade crispy air fryer fish sticks. Serve with delicious dipping sauce.
Ingredients:
  • Nonstick olive oil spray
  • 1 pound cod, sliced into 3-inch sticks
  • 1/2 cup cornstarch
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • For the pickle and caper tartar sauce
  • 1/2 cup mayo
  • 1 tablespoon fresh lemon juice
  • 1/4 cup minced pickles
  • 2 tablespoons capers
  • 1/8 teaspoon kosher salt
  • To garnish
  • Chopped parsley or dill, optional
  • To serve
  • Lemon wedges
Instructions:
  • Prepare the air fryer by greasing the pan with nonstick spray. Preheating the air fryer is optional for this recipe.
  • Create a breading station by mixing cornstarch, salt, and pepper in one dish, whisking eggs in another dish, and combining panko and paprika in a third dish.
  • Coat the fish sticks: Dredge the fish sticks in cornstarch, dip into the egg mixture, and then coat with panko breadcrumbs, ensuring all sides are covered.
  • To air fry the fish sticks, place them in a single layer in the air fryer basket, lightly coat with cooking spray, and air fry at 375˚F for 6 minutes. Flip with tongs and cook for an additional 4-6 minutes until golden brown. Season with salt, if desired. Repeat with remaining batch.
  • Prepare the zesty pickle and caper tartar sauce by mixing mayonnaise, fresh lemon juice, minced pickles, capers, and kosher salt in a small bowl until fully combined.
  • Garnish with parsley or dill for a fresh touch. Serve fish sticks with tartar sauce and lemon wedges. Store leftovers in an airtight container in the fridge for a few days. Reheat in an air fryer at 350˚F for 3 minutes. If you enjoyed the dish, please leave a rating!
