White christmas ice cream cones

Dazzle guests with snowy white ice cream cones, a festive finale for your Christmas feast!
Ingredients:
  • 125g mixed glace fruits (such as apricots, cherries, pears and cedro - see note)
  • 80ml sherry
  • 125g dark chocolate
  • 1.25L good-quality vanilla ice cream, softened
  • 90g almond
Instructions:
  • Dice fruits into small, uniform pieces and combine them in a bowl with sherry. Cover and let it sit at room temperature for a minimum of 4 hours or overnight.
  • Prepare paper moulds by cutting eight 30cm x 20cm sheets of baking paper and trimming 8 sheets of A4 paper to the same size.
  • Place a baking paper sheet over a regular paper sheet. Fold the top right corners down to the middle and roll to create a cone shape. Secure with a small piece of sticky tape. Repeat the process with remaining sheets of paper and place in 8 champagne flutes or slim wine glasses.
  • Chop the chocolate finely. Drain the glace fruits, discard the liquid, then mix with softened ice cream, almonds, and chocolate. Fill paper cones with the ice cream mixture, packing it down tightly and smoothing the top. Place in the freezer for a minimum of 6 hours or overnight until firm.
  • Peel off the tape and gently unwrap the paper. Flip the cones onto the serving plates.
