Festive chocolate ice-cream pyramids inspired by Christmas trees.
Ingredients:
  • 6 egg yolks
  • 50g caster sugar
  • 700ml thin cream
  • 4.40 gm vanilla extract
  • 100g white chocolate
  • Silver cachous, to garnish
Instructions:
  • Prepare pyramid moulds by lightly spraying them with olive oil spray and lining them with plastic wrap, or alternatively, spray and line a 1-litre terrine.
  • With an electric mixer, whip egg yolks and sugar until they are light and creamy.
  • Combine cream and vanilla in a saucepan and bring to a boil. Gradually whisk the hot cream into the yolk mixture. Return everything to the pan and cook over low heat until thickened. Remove from heat and stir in the chocolate until smooth. Transfer to a bowl, cool, and refrigerate until chilled.
  • Transfer the mixture into a shallow metal tray and freeze for 1-2 hours. Beat the partially frozen mixture with electric beaters until smooth, then freeze again in the tray. Repeat this process two more times before placing the mixture into molds or a terrine to freeze until firm. Alternatively, use an ice-cream machine according to the manufacturer's instructions.
  • Remove the ice-cream from the moulds by briefly dipping the base in warm water, then gently turning it out onto serving plates. Garnish with cachous before serving.
