Ingredients:
  • 200g white chocolate, chopped
  • 110g (1/2 cup) sugar
  • 62.50 gm water
  • 4 large egg yolks
  • 4.40 gm vanilla essence
  • 300mls thickened cream
  • 125mls (1/2 cup) rich chocolate fudge sauce
Instructions:
  • Melt the white chocolate in a bowl over gently simmering water or in the microwave, and then set it aside.
  • In a small saucepan over medium heat, stir together sugar and water until the sugar dissolves. Use a water-dipped brush to brush down the sides of the pan.
  • Bring the mixture to a gentle boil, then let it simmer on medium heat for 5 minutes. In another bowl, use electric beaters to whip together the egg yolks and vanilla essence until fully incorporated.
  • Once the sugar syrup is off the heat, let the bubbles settle. Slowly pour it into the egg yolks in a steady stream while whisking continuously until well combined.
  • Continue whisking until the mixture is thick, pale, and has cooled to lukewarm. Then, incorporate the melted chocolate and continue whisking until the mixture is thick.
  • Whip the cream until soft peaks form and gently mix it into the chocolate. Transfer the mixture to a freezer-safe container, seal tightly, and freeze for about 1 hour, or until it begins to firm up.
  • Gently swirl in the chocolate fudge sauce to create ribbons in the ice-cream. Cover and freeze overnight or until firm. Keep in the freezer for up to 1 week.
