White Grape Jam with Fresh Figs

Seasonal fig and white grape jam: A unique and tasty food gift option.
Ingredients:
  • 1.75 pounds chopped seedless green grapes
  • 8 ounces fresh figs, sliced into 3/4 inch slices
  • 3 cups sugar
  • 1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
Instructions:
  • Check 5 cup-sized jars for cracks and rust on the rings, discarding any damaged jars. Keep jars immersed in simmering water until jam is ready. Clean new lids and rings with warm soapy water.
  • In a large pot, gently warm the chopped grapes until they begin to release their juice. Use an immersion blender to coarsely mash them, then mix in the sliced figs.
  • Combine pectin, bring mixture to a vigorous boil, stir in sugar until dissolved, boil for precisely 1 minute on high heat while stirring constantly, then skim off any foam with a ladle.
  • Fill the prepared jars with grape jam, leaving 1/4 inch of space at the top. Use a clean knife or thin spatula to remove air bubbles by running it around the insides of the jars. Wipe the rims with a moist paper towel to clean any spills. Secure the lids tightly by screwing on the rings.
  • Fill a large stockpot halfway with water and bring to a boil. Lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • After cooking, allow the jars to cool undisturbed on a cloth-covered surface for a full day. Check the lids to ensure they are sealed properly. Store the jars without the rings in a cool, dark place.
