White peach cordial

Make bellini cordial for a crowd-pleasing cocktail mixer. Just mix with prosecco or soda water for a refreshing summer drink.
Ingredients:
  • 1 kg white peaches
  • 2 vanilla pods
  • 250 g golden caster sugar
  • 1 lemon
Instructions:
  • Halve and pit the peaches. Split the vanilla pods and scrape out the seeds. Blend peaches in a food processor with the skins. In a pan, mix peach purée with sugar, lemon juice, and vanilla seeds. Simmer on low until thickened for about 20 minutes. Pour into sterilized bottles and store in a cool place.
