Ingredients:
  • 2 x 400g cans rinsed and drained cannellini beans
  • 2 peeled and chopped potatoes
  • 1530.00 gm chicken style liquid stock
  • 1 crushed garlic clove
  • 3 sprigs thyme
  • salt and cracked black pepper
  • 6 slices prosciutto
Instructions:
  • Combine cannellini beans, potatoes, chicken stock, garlic, and thyme in a large saucepan on medium heat; let it simmer for 10 minutes, then season with salt and cracked black pepper. Preheat the grill on high. Lay prosciutto on a baking tray and grill for 2 minutes each side until crispy. Remove thyme from the soup and blend using a hand blender until smooth. Transfer to a serving bowl, break prosciutto into pieces, and sprinkle over the soup. Serve promptly.
