Whitebean, chickpea and rocket salad

Ingredients:
  • 40.00 ml red wine vinegar
  • 75.08 gm olive oil
  • salt and cracked black pepper
  • 400g cannellini beans, rinsed and drained
  • 400g chickpeas, rinsed and drained
  • 250g cherry tomatoes, halved
  • 200g button mushrooms, thinly sliced
  • 175g baby rocket
  • crusty bread, to serve
Instructions:
  • Combine vinegar, oil, salt, and cracked black pepper in a small bowl, whisk together until well blended. Set aside.
  • Combine white beans, chickpeas, tomato, mushroom, and rocket in a large bowl. Drizzle with dressing and toss gently until everything is evenly coated. Plate the mixture and sprinkle with feta. Serve with crusty bread.
