Ingredients:
  • a few fresh bay leaves
  • ½ a bunch of fresh oregano
  • 8 figs
  • a few rounds of ricotta or other round cheeses, such as camembert
  • 1 orange
  • extra virgin olive oil
  • runny honey
  • ciabatta
  • a few garlic cloves
  • a large handful of rocket
  • a few sprigs of fresh mint
Instructions:
  • 1. Preheat the oven to 200ºC/gas 6. 2. Place bay leaves in a roasting tray, sprinkle oregano, and place the ricotta on top. Season well. 3. Halve the figs and arrange around the cheese. Grate orange zest over the top, drizzle with oil and honey. 4. With your hands, massage the flavors into the cheese, sprinkle with more oregano. 5. Roast for 30 to 35 minutes until golden and set. 6. Slice ciabatta, grill on a griddle pan. Rub with garlic, drizzle with oil. 7. Serve the roasted ricotta on a board with grilled toast, figs, rocket, and fresh mint.
