In Chinese culture, serving whole fish represents good luck for the new year with a perfect beginning and end.
Ingredients:
  • 1.8kg whole snapper, cleaned
  • 3 garlic cloves, thinly sliced
  • 6cm piece fresh ginger, peeled, cut into matchsticks
  • 65.63 gm soy sauce
  • 40.00 ml Chinese rice wine
  • 2 tsp sesame oil
  • 2 green onions, thickly sliced
  • 125.00 ml fresh coriander sprigs
Instructions:
  • Preheat the oven to 220C/200C fan-forced. Line a large baking tray with foil and then with baking paper.
  • Rinse fish under cold water, gently dry with paper towel, and arrange on a tray.
  • 1. Spread a fragrant mix of garlic and ginger over the fish. 2. Mix soy sauce, fish sauce, rice wine, and oil in a jug, then generously pour over the fish. 3. Seal the tray tightly with foil before roasting for 40 to 45 minutes, or until the fish is fork-tender. 4. Present the dish on a warmed serving platter, garnish with onion, chili, and fresh coriander sprigs. 5. Serve and enjoy!
