Make a moist, whole wheat pumpkin-chocolate chip loaf perfect for any time of day.
Ingredients:
  • 2 cups whole wheat pastry flour
  • 0.5 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 3 egg whites
  • 1 (15 ounce) can pumpkin puree
  • 0.66666668653488 cup chocolate chips
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large bowl, mix flour, brown sugar, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt. In a separate bowl, combine egg whites, pumpkin puree, and vanilla extract. Combine wet ingredients with dry ingredients until mixed. Gently fold in chocolate chips and transfer batter to a 9x5-inch loaf pan.
  • Bake in the preheated oven for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the tin, then transfer to a wire rack to cool completely.
