Wholesome Buckwheat Crepes

Irresistible buckwheat crepes with eggs, brown sugar, cinnamon, and a pinch of salt.
Ingredients:
  • 0.66666668653488 cup raw buckwheat groats
  • 1.3333333730698 cups water, to cover
  • 1 egg
  • 2 tablespoons brown sugar
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup water, or as needed
Instructions:
  • Soak buckwheat groats in a bowl with 1 1/3 cups of water for 4 hours to overnight, remembering to drain and rinse once or twice during soaking.
  • Give the groats one last rinse and drain. Place them in a blender along with egg, brown sugar, cinnamon, salt, and 1/2 cup water; blend until smooth. Add more water as needed for a spreadable consistency.
  • Grease skillet and heat over medium flame.
  • Drizzle 1/3 cup batter into the skillet, gently swirl to evenly coat, and place back on the heat.
  • Cook the crepe for 2 minutes until firm in the middle, then gently flip and cook for an additional 2 minutes. Flip again and cook for 12 seconds. Plate and serve right away.
