Healthy whole wheat muffins bursting with carrots, applesauce, and vibrant orange flavor.
Ingredients:
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 0.25 teaspoon ground cinnamon
  • 4 eggs
  • 0.75 cup brown sugar
  • 0.66666668653488 cup applesauce
  • 0.33333334326744 cup vegetable oil
  • 3 cups shredded carrots
  • 1 orange, zested
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then prepare your muffin tin by greasing it or lining it with paper liners.
  • Combine whole wheat flour, all-purpose flour, baking powder, baking soda, and cinnamon, sifting them together in a bowl.
  • In a bowl, whisk together eggs, brown sugar, applesauce, and vegetable oil. Gently fold the egg mixture into the flour mixture until just combined; mix in carrots and orange zest. Spoon batter into muffin cups.
  • Bake in the hot oven until a toothpick inserted near the center comes out clean, approximately 30 minutes.
