Wild mushroom crostini

Ingredients:
  • 100g unsalted butter
  • 500g mixed wild mushrooms (such as shiitake, enoki, oyster and Swiss brown)
  • 125ml sherry
  • 2 tsp chopped thyme
  • 2 garlic cloves, crushed
  • 40.00 ml chopped flat-leaf parsley
  • Baguette, sliced, toasted, to serve
Instructions:
  • Warm the butter in a large frypan over medium heat. If your pan is not large enough, cook the mushrooms in batches to ensure they fry properly instead of sweating.
  • Once the butter begins to bubble, toss in the mushrooms and crank up the heat. Sauté for 1-2 minutes until the mushrooms start to soften. Pour in the sherry, then mix in the thyme and garlic.
  • After cooking for 3 minutes, garnish with fresh parsley and transfer the mushrooms onto a serving platter alongside the toasted bread for a delightful self-serve experience.
  • Present a pot of velvety softened goat cheese for guests to elegantly spread on their golden toast.
