Indulge in a flavorful vegetarian pizza with garlic and wild mushrooms.
Ingredients:
  • 27.30 gm olive oil, plus extra to drizzle
  • 2 garlic cloves, crushed
  • 250g mixed wild mushrooms such as shiitake and oyster, sliced if large
  • 250g Swiss brown mushrooms, sliced
  • 100g baby spinach leaves
  • 1/2 lemon, juiced
  • 2 (15cm each) bought pizza bases
  • 125g soft goats' cheese
  • 40.00 ml chopped fresh chives
Instructions:
  • Preheat oven to 200°C.
  • Heat olive oil in a frying pan over high heat until very hot. Quickly sauté garlic and mushrooms until mushrooms are just wilted without releasing liquid. Stir in spinach and lemon juice, allowing spinach to just wilt.
  • Sprinkle with salt and freshly cracked black pepper, then take off the heat.
  • Cover the pizza bases with creamy goats' cheese and transfer them to a baking tray.
  • Spread the mushroom mixture over the top and lightly drizzle with additional oil. Bake for 10 minutes in the oven. Garnish with chives and a dollop of creme fraiche, if preferred.
