Almond Parmesan Chicken Bites in a creamy Cheddar mushroom sauce with white wine, served over wild rice.
Ingredients:
  • 6 skinless boneless chicken breasts, cut into 2-inch cubes
  • 2 tablespoons butter
  • 2 cups sliced fresh mushrooms
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (5 ounce) can evaporated milk
  • 1.5 cups shredded Cheddar cheese
  • 0.5 teaspoon garlic powder
  • 0.5 cup white wine
  • 0.5 cup mayonnaise
  • 0.5 cup slivered almonds for topping
  • 0.25 cup grated Parmesan cheese for topping
Instructions:
  • In a saucepan, generously cover the chicken with water. Boil over high heat, then reduce to medium-low, cover, and simmer for approximately 10 minutes until chicken is no longer pink.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • In a skillet over medium heat, melt butter before adding mushrooms. Cook and stir until mushrooms are lightly browned and liquid is released, about 5 minutes.
  • Arrange the chicken pieces in the baking dish and top with the sauteed mushrooms.
  • Combine soup, milk, Cheddar cheese, and garlic powder in a small saucepan over medium heat until creamy. Remove from heat, stir in white wine and mayonnaise. Pour over chicken and mushrooms, sprinkle with slivered almonds and Parmesan cheese. Bake for 1 hour in preheated oven.
