Indulgent squash rolls made with a variety of golden winter squashes.
Ingredients:
  • 1.5 cups cubed winter squash
  • 1 cup scalded milk
  • 2 (.25 ounce) packages active dry yeast
  • 0.5 cup warm water (110 degrees F/45 degrees C)
  • 6 cups all-purpose flour
  • 0.5 cup white sugar
  • 2 teaspoons salt
  • 0.5 cup shortening
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Boil squash cubes in a saucepan until tender, about 15 minutes. Drain, cool, and mash.
  • 1. In a small bowl, let the yeast mingle with warm water. In a large bowl, blend 5 cups flour, sugar, and salt. Add the yeast potion, along with shortening, squash, and milk. Combine thoroughly. Gradually mix in the remaining flour, 1/2 cup at a time, making sure to mix well after each addition. Once the dough comes together, transfer it to a floured surface and knead until smooth and elastic, approximately 8 minutes. Coat a large bowl with a light layer of oil, place the dough inside, and coat it with oil. Cover the bowl with a damp cloth and allow the dough to rise in a cozy spot until it's doubled in size, about 1 hour.
  • Take the dough and shape it into twelve equal pieces, forming them into rounds. Put the rounds in a lightly greased 13x9-inch baking pan. Cover with a damp cloth and allow them to rise until doubled in size, approximately 30 minutes. While waiting, preheat the oven to 400 degrees F (200 degrees C).
  • Bake rolls in the preheated oven until they turn golden brown, about 10-15 minutes.
