Wintertime French-Style Split Pea Soup

Easy French-style split pea soup with potatoes, carrots, and ham - no soaking required, perfect for a quick weeknight dinner.
Ingredients:
  • 2 tablespoons olive oil
  • 1 large onion, coarsely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon herbes de Provence
  • 1.5 teaspoons ground turmeric
  • 2 large bay leaves
  • 1 pinch cayenne pepper
  • 1 (32 fluid ounce) container vegetable stock
  • 3 cups water
  • 1 pound dried split peas, rinsed
  • 2 pounds new potatoes, cut into bite-size chunks
  • 0.75 pound carrots, cut into bite-size chunks
  • 1.5 cups chopped lean cooked ham
Instructions:
  • In a heavy soup pot or Dutch oven over medium heat, warm olive oil. Add onion and garlic; cook until softened, approximately 5 minutes. Mix in herbes de Provence, turmeric, bay leaves, and cayenne pepper; stir until aromatic, for about 2 to 3 minutes.
  • Combine vegetable stock, water, split peas, half of the potatoes, and half of the carrots in a pot. Bring to a boil, then simmer covered on low heat until peas are almost tender, approximately 35 minutes.
  • Gently fold in the rest of the potatoes and carrots, then mix in the ham. Cover and simmer until veggies are soft, adjusting liquid level with more stock or water if necessary, for approximately 25 minutes.
