Ingredients:
  • 21.00 gm fresh lemon juice
  • 18.20 gm extra light olive oil
  • Freshly ground pepper
  • 1 pink lady apple, quartered, core removed, sliced
  • 1 beurre bosc pear, quartered, core removed, sliced
  • 2 witlof, leaves separated
  • 80g Dairy Endeavour blue cheese, crumbled
  • 45g walnut
  • 65g raisins
Instructions:
  • Combine freshly squeezed lemon juice and extra-virgin olive oil in a small bowl, whisk until emulsified, then season generously with black pepper.
  • Combine the apple and pear in a spacious bowl, then drizzle with the lemon dressing and gently toss to ensure even coating.
  • Gently combine the witlof leaves, blue cheese, walnuts, and raisins. Serve immediately, sprinkled with black pepper.
