Ingredients:
  • 21.00 gm fresh lemon juice
  • 9.20 gm olive oil
  • Salt & freshly ground black pepper
  • 3 witlof, outer leaves discarded, inner leaves separated, washed, dried
Instructions:
  • Combine the lemon juice, olive oil, salt, and pepper in a small screw-top jar and shake vigorously.
  • In a bowl, gently combine the witlof leaves with the dressing until evenly coated. Enjoy immediately.
