Magical Pumpkin Juice made with apple cider for a taste of wizardry.
Ingredients:
2quarts apple cider, divided
1 (2 inch) piecefresh ginger, sliced
1cinnamon stick
0.5 teaspoonwhole cloves
0.5 cupbrown sugar
0.25 cuphoney
1 (28 ounce) canpumpkin puree
Instructions:
Combine 3 cups apple cider with ginger, cinnamon stick, and cloves in a saucepan. Bring to a boil, then simmer on low heat for about 15 minutes until slightly reduced.
Take the saucepan off the heat and stir in the brown sugar and honey until fully dissolved in the cider mixture.
Transfer the liquid to a wide glass dish and refrigerate it until fully chilled, for a minimum of 45 minutes.
Combine the chilled apple cider mixture, the remaining apple cider, and the pumpkin puree in a large pitcher, stirring until the puree completely dissolves.
