Butterscotch sugar cookies inspired by Harry Potter's Wizarding World.
Ingredients:
  • 0.75 cup butter, cubed, at room temperature
  • 0.75 cup packed brown sugar
  • 0.5 cup white sugar
  • 1 large egg
  • 2 tablespoons maple syrup
  • 2 tablespoons sour cream
  • 2 teaspoons vanilla butter and nut flavoring
  • 0.5 teaspoon pumpkin pie spice
  • 2 teaspoons baking soda
  • 2 cups all-purpose flour
  • 2 tablespoons white sugar, or as needed
Instructions:
  • In a large bowl, cream together butter, brown sugar, and white sugar until creamy using an electric mixer. Mix in egg, maple syrup, sour cream, vanilla butter and nut flavoring, and pumpkin pie spice until well combined. Stir in baking soda, then gradually add flour, 1/2 cup at a time, until a sticky dough forms.
  • Refrigerate dough for 30 minutes until chilled.
  • Preheat the oven to 350°F (175°C).
  • Place 2 tablespoons of white sugar in a shallow bowl. Shape dough into walnut-sized balls with your hands, coat the balls in sugar, and set them on an ungreased cookie sheet. Gently press each cookie down with your palm, ensuring space between each one for spreading while baking.
  • Bake until edges are golden brown, about 8 to 10 minutes. Then, cool on a rack.
