Modernize Purim cookies using cake mix, filled with preserves or poppyseed filling.
Ingredients:
  • 1 (18.25 ounce) package moist yellow cake mix
  • 1 cup fruit preserves, any flavor
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease two cookie sheets with cooking spray.
  • Combine cake mix and flour in a large bowl. Add eggs and water, mix until a stiff dough forms. Roll out dough on a lightly floured surface to 1/8 inch thickness. Cut into 3-inch circles. Spread 1 teaspoon fruit preserves in the center of each circle and fold into a triangle, sealing edges with water if needed. Place on prepared cookie sheets, spacing 2 inches apart.
  • Bake in the preheated oven until lightly browned, around 6 to 8 minutes. Let the cookies cool for 1 minute on the sheets before transferring them to wire racks to cool completely.
