Working woman's risotto

Quick and simple risotto perfect for busy women!
Ingredients:
  • 18.20 gm olive oil
  • 1 large brown onion, finely chopped
  • 220g (1 cup) arborio rice
  • 200g small cup mushrooms, thinly sliced
  • 625ml (2 1/2 cups) chicken style liquid stock
  • 125ml (1/2 cup) dry white wine
  • 850g green prawns, peeled, coarsely chopped
  • 30g butter
Instructions:
  • In a deep microwave-safe dish, mix the oil and onion. Cover and microwave on High for 4 minutes at 800 watts.
  • Combine the rice, mushrooms, stock, and wine in a pot. Season with salt and pepper to taste. Stir well to mix everything. Cover and cook on High/800watts/100% for 10 minutes. Stir, then cover again and cook on High/800watts/100% for another 10 minutes.
  • Combine prawns, butter, and half of the parsley in a bowl. Cover and let sit for 5 minutes, until prawns are cooked through. Sprinkle with remaining parsley before serving.
