World's Best Maine Whoopie Pies - Ayuh

Decadent chocolate double cookies filled with fluffy marshmallow frosting, straight from Maine. Ideal for anytime snacking when frozen.
Ingredients:
  • 0.5 cup vegetable shortening
  • 2 cups milk
  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder (such as Hershey's®)
  • 2 tablespoons unsweetened cocoa powder (such as Hershey's®)
  • 1 tablespoon baking soda
  • 1.5 teaspoons salt
  • 1 cup milk
  • 1 cup butter at room temperature
  • 1 cup vegetable shortening
  • 2 tablespoons all-purpose flour
  • 2 (7 ounce) jars marshmallow creme
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) while preparing 25 pieces of plastic wrap, each about 5 inches square.
  • In a large mixing bowl, combine 1/2 cup vegetable shortening, 2 cups milk, 2 cups sugar, eggs, and 2 teaspoons vanilla extract. Beat until smooth and creamy.
  • Whisk together 4 cups of flour, 1/2 cup plus 2 tablespoons of unsweetened cocoa, baking soda, and salt in a separate bowl until fully combined. Mix the flour mixture into the wet ingredients until smooth.
  • Using teaspoons, portion the batter onto ungreased baking sheets in small round dollops, each about 2 inches apart. The recipe yields around 50 cookies that will rise and expand significantly during baking.
  • Bake in the preheated oven for 8 to 10 minutes until the cookies are set in the middle. Let them cool on the baking sheets for a few minutes before transferring to racks to finish cooling.
  • Heat 1 cup of milk in a microwave-safe measuring cup until hot but not simmering, for 1 to 2 minutes.
  • Pour warm milk into a large mixing bowl, then add room temperature butter, vegetable shortening, sugar, flour, vanilla extract, and marshmallow creme. Beat on high speed until the fluffy frosting forms, about 5 to 10 minutes. Don't worry if it looks lumpy at first; keep beating until smooth.
  • For assembling the whoopie pies, match 2 cookies of similar size. Spread 1 1/2 tablespoons of frosting on the flat side of one cookie. Place the second cookie on top, flat-side down. Wrap each completed whoopie pie in plastic wrap and freeze. Repeat the process for the rest of the cookies and frosting.
  • Before serving, gently take the whoopie pies out of the freezer and let them sit until they are very cold but not frozen solid, for about 10 to 15 minutes.
