WWII Oatmeal Molasses Cookies

Historical oatmeal cookies with molasses, a WW II twist.
Ingredients:
  • 2 cups all-purpose flour
  • 2 cups oatmeal
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 0.75 cup shortening
  • 2 eggs, beaten
  • 5 tablespoons light molasses
  • 2 teaspoons vanilla extract
  • 0.5 cup chopped walnuts
  • 0.5 cup raisins
Instructions:
  • Preheat oven to 350°F (175°C).
  • Combine flour, oatmeal, baking soda, baking powder, and salt in a large bowl, stirring well.
  • In a separate bowl, cream together the sugar and shortening until smooth and creamy. Add in the beaten eggs, molasses, and vanilla. Slowly incorporate the dry ingredients. Fold in the walnuts and raisins. Spoon teaspoonfuls of the dough onto ungreased baking sheets.
  • Bake for 10 to 12 minutes, or until slightly browned. Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
