Generations-old WWII ration-inspired versatile family recipe. Perfect for any meal or snack time!
Ingredients:
  • 2 tablespoons finely chopped onion
  • 1 slice fully cooked luncheon meat (e.g. Spam)
  • 1 egg, beaten
  • 2 slices bread
  • 1 slice American cheese
  • 1 slice tomato
Instructions:
  • In a small skillet over medium-high heat, melt butter. Saute onion until soft in the butter. Mash luncheon meat with a fork and add to the skillet. Cook until browned, for about 2-3 minutes. Pour the egg into the skillet, covering the meat and onion. Cook until firm, then flip to brown the other side.
  • Lay the egg and meat on one slice of bread, add cheese and tomato if desired, then top with the other slice of bread. Optional: toast the bread beforehand for extra flavor.
