Yellow and Purple Mashed Potatoes

Colorful swirl mashed potatoes, perfect for holidays or any meal with meatloaf or chicken.
Ingredients:
  • 1 pound purple potatoes, scrubbed
  • 1 pound Yukon Gold potatoes, scrubbed
  • 2 cups milk
  • 1 stick butter
  • 2 tablespoons minced fresh garlic
  • 0.5 cup chopped green onions
  • 0.25 cup crumbled feta cheese
Instructions:
  • Peel and cube purple and Yukon Gold potatoes, keeping them in separate bowls.
  • In separate pots, boil each type of potato in salted water until tender, about 10 to 15 minutes. Drain and mash in their respective pots.
  • Heat milk in a saucepan over low heat, stirring constantly until hot without scalding. Add butter, garlic, salt, and pepper; stir until butter melts and garlic is fragrant, about 2 minutes. Remove from heat and divide mixture evenly into each pot of mashed potatoes, stirring to combine.
  • Transfer both potato mixtures to a large serving bowl, gently swirl them together for a marbled effect, sprinkle with green onions and feta, and serve.
