Flavorful veggie skewers perfect for a summer BBQ.
Ingredients:
  • 24 cubes Paneer cheese
  • 4 small zucchinis, sliced thickly
  • 1 red capsicum, cubed
  • 3 small red onions, cut into quarters
  • 24 baby roma tomatoes
  • 84.00 gm Yellow Curry Paste
  • 252.50 gm coconut milk
  • 48.80 gm Fish Sauce
  • 4 makrut lime leaves, finely sliced
  • Salad, to serve
Instructions:
  • Skewer Paneer cheese, zucchini, red capsicum, red onions, and tomatoes in a colorful and exciting pattern on wooden skewers.
  • Combine the marinade ingredients in a bowl and whisk until fully mixed.
  • Skewer the ingredients in a shallow non-metallic dish and generously coat them with the flavorful marinade.
  • Marinate for at least 20 minutes, flipping regularly, or ideally refrigerate overnight for maximum flavor infusion.
  • Preheat the BBQ or griddle pan over medium heat, then cook the skewers for 6-8 minutes, turning and basting regularly.
  • Garnish with fresh coriander leaves and lemon wedges and serve hot alongside a side salad and warm naan bread.
