Yellow curry mussels with lime

Ingredients:
  • 28.00 gm Thai yellow curry paste
  • 500ml coconut milk
  • 12.00 gm brown sugar
  • Juice of 2 limes
  • 2kg mussels, scrubbed, debearded
  • 6 makrut lime leaves (see note)
  • 1 long red chilli, seeds removed, finely chopped
  • 40.00 ml coriander leaves, chopped
  • 200g rice
Instructions:
  • In a wok, mix curry paste, coconut milk, sugar, and lime juice. Bring to a boil over high heat while stirring until sugar dissolves. Add mussels and optional lime leaves, cover, and cook for 5 minutes until mussels open, discarding any closed ones. Serve mussels and broth in bowls, garnish with chili and coriander, and accompany with rice.
