Creamy and subtly sweet, this dish complements any meal and is perfect for sneaking in some veggies for your kids!
Ingredients:
  • 2 eggs
  • 1 (11 ounce) can cream-style corn
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons white sugar
  • 0.25 teaspoon minced garlic
  • 0.25 teaspoon ground black pepper
  • 0.25 cup chopped onions
  • 2 cups sliced yellow squash
  • 0.5 cup biscuit baking mix
Instructions:
  • Preheat the oven to a toasty 350 degrees Fahrenheit (175 degrees Celsius) and generously grease a 9x9 inch baking pan.
  • In a large bowl, whisk eggs until smooth. Add cream corn, Parmesan cheese, oil, sugar, garlic, and pepper. Gently mix in onions, squash, and biscuit mix. Transfer mixture into a prepared baking pan.
  • Bake until golden and bubbly in a preheated oven for 30-40 minutes.
