Vibrant vegetables and tofu in a delicious vegetarian stir fry.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 3 cloves garlic, minced
  • 1 yellow squash, cut into bite-size cubes
  • 1 zucchini, cut into bite-size cubes
  • 1 (12 ounce) package extra-firm tofu, cut into bite-size cubes
  • 0.25 cup brown sugar
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • salt and ground black pepper to taste
Instructions:
  • In a large skillet or wok over medium-high heat, warm olive oil. Sauté garlic in the oil until aromatic, approximately 30 seconds. Add squash and zucchini, sauté until tender, about 7 minutes. Transfer the vegetable mixture to a bowl.
  • Return the skillet to medium-high heat, add tofu pieces, and generously sprinkle with brown sugar and soy sauce. Sauté and stir until tofu turns golden brown on all sides, about 3 to 5 minutes.
  • Add the squash mixture back to the skillet and heat through for about 3 minutes, stirring occasionally. Mix in Sriracha sauce and season with salt and black pepper.
