Transform yellow squash and zucchini into a refreshing summer salad with mint lemon dressing, crispy prosciutto, and crumbled feta.
Ingredients:
  • 2 yellow squash, shaved into thin strips
  • 1 zucchini, shaved into thin strips
  • 1 teaspoon salt
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon olive oil
  • 2 teaspoons fresh lemon juice
  • 0.5 teaspoon grated lemon zest
  • 0.5 teaspoon freshly ground black pepper
  • 3 slices prosciutto, chopped
  • 0.25 cup crumbled feta cheese
Instructions:
  • Combine yellow squash and zucchini with a sprinkle of salt in a spacious bowl.
  • In a small bowl, combine mint, olive oil, lemon juice, lemon zest, and black pepper. Drizzle this flavorful mixture over the squash and toss everything together until well coated.
  • In a small nonstick skillet over medium heat, crisp up the prosciutto by cooking and stirring for about 2 minutes.
  • Plate the squash salad evenly among 4 plates and generously top each portion with a sprinkle of prosciutto and feta cheese.
