Yoghurt muesli bars

Delicious muesli bars with a yogurt drizzle - great for breakfast or on-the-go snacking!
Ingredients:
  • 140g (1 1/2 cups) rolled oats
  • 185g (1 cup) chopped dried fruit medley
  • 95g (1/2 cup) dried blueberries
  • 90g (1/2 cup) sunflower seed, pepita and pine nut mix
  • 50g (1/4 cup) coconut sugar
  • 20g (1/4 cup) desiccated coconut
  • 2.50 gm ground cinnamon
  • 2 bananas, mashed
  • 48.00 gm tahini, peanut butter or almond butter
  • 20.00 ml thick Greek-style yoghurt
  • 90g (1/2 cup) icing sugar mixture, sifted
  • 8.40 gm solidified coconut oil
Instructions:
  • Preheat your oven to 180°C (160°C fan forced). Grease a 20 x 30cm slice pan and line it with baking paper, leaving the sides to hang over.
  • In a large bowl, mix the oats, fruit medley, blueberries, seed and nut mix, sugar, coconut, and cinnamon. Create a well in the center, then add the banana, tahini or nut butter, and egg. Stir until everything is thoroughly combined. Transfer the mixture to the prepared pan, then use the back of a spoon to press it down and create a flat surface.
  • Bake until golden brown, about 35-40 minutes. Allow it to cool in the pan.

  • Drizzle the yogurt icing over the cooled slice, chill in the fridge for 15 minutes to set, then cut into 16 bars on a chopping board.
