Foolproof yogurt cake: simple ingredients, easy for all skill levels.
Ingredients:
  • 2 large eggs
  • 3/4 cup (150 grams) granulated sugar
  • 1 cup (226 grams) plain whole-milk yogurt, regular or Greek
  • 1/2 cup vegetable oil, canola oil, or olive oil, plus more for coating the pan
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups (192 grams) all-purpose flour
  • Powdered sugar, for dusting (optional)
Instructions:
  • Preheat your oven to 350°F, placing a rack in the middle. Lightly grease a 9x5-inch or 8 1/2 x 4 1/2-inch loaf pan with olive oil and line it with parchment paper, leaving a 1-inch overhang on the long sides to create a sling.
  • In a large bowl, vigorously whisk together eggs, sugar, yogurt, oil, and vanilla extract until pale yellow and frothy, about 1 minute.
  • Combine dry ingredients: Whisk baking powder and kosher salt into the bowl of wet ingredients. Add flour and gently stir with a rubber spatula until just combined, making sure all the flour is mixed in (some lumps are okay, do not overmix).
  • Bake in prepared pan: Spread batter evenly in pan. Bake for about 45 minutes until lightly browned and a cake tester comes out clean with a few crumbs.
  • Allow the cake to cool: Place the pan on a cooling rack for 10 minutes. Then, use the parchment paper sling to effortlessly lift the cake out of the pan and onto the rack to cool thoroughly.
