Lemon yogurt loaf with tangy lemon glaze.
Ingredients:
  • 1 teaspoon unsalted butter
  • 1.75 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 cup plain yogurt
  • 1 cup sugar
  • 0.5 cup oil
  • 1.5 teaspoons lemon zest
  • 0.5 teaspoon vanilla extract
  • 3 large eggs
  • 0.5 cup sugar
  • 0.5 large lemon, juiced
Instructions:
  • Preheat the oven to 350°F (175°C), then generously butter and flour a loaf pan.
  • In a bowl, mix together the flour, baking powder, and salt; set aside.
  • In a large bowl, mix together yogurt, sugar, oil, lemon zest, and vanilla extract. Use an electric mixer to beat the mixture for 3 to 5 minutes. Then, add the eggs one at a time, making sure to beat well after each addition.
  • Gently sprinkle the flour mixture over the batter, then use a spatula to incorporate. Transfer the batter into the prepared loaf pan.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean. If the loaf gets too dark, cover it with aluminum foil after 40 minutes.
  • Take out of the oven and let it cool in the pan for 10 minutes.
  • In a small saucepan over medium heat, combine sugar and lemon juice. Stir and cook until the sugar dissolves completely and the glaze becomes clear and syrupy, which usually takes 3 to 5 minutes. Be careful not to let it brown.
  • Take the loaf out of the pan and place it on a wire rack. Brush the loaf all over the top and sides with the lemon syrup, letting it soak into the warm loaf. Let it cool before slicing.
