Chilled and aromatic Indian side dish pairs perfectly with grilled meats.
Ingredients:
  • 1 cup jasmine rice
  • 1 tablespoon ghee (clarified butter)
  • 1 dried red chile pepper, broken in half
  • 1 teaspoon black mustard seeds
  • 0.5 teaspoon ground turmeric
  • 4 fresh curry leaves
  • 0.25 cup milk
  • 1 cup plain yogurt
Instructions:
  • In a saucepan, bring rice and water to a boil over high heat. Lower the heat to medium-low, cover, and simmer until the rice is tender, about 20-25 minutes.
  • In a small skillet over medium heat, heat ghee. Add broken chile pepper and cook until fragrant for about 30 seconds. Then add black mustard seeds and cook until they start to pop for another 30 seconds. Remove from heat and stir in turmeric, curry leaves, and asafoetida powder.
  • Combine milk, yogurt, and spice ghee in a large bowl, whisk until smooth. Gently fold in the rice until fully incorporated. Season with salt to taste. Let cool to room temperature before serving.
