Authentic and easy Indian dish the whole family will enjoy! Serve with basmati rice and yogurt.
Ingredients:
  • 1 teaspoon cumin seed
  • 1 onion, finely chopped
  • 0.25 cup tomato paste
  • 0.25 cup water
  • 1 pound skinless, boneless chicken breast halves - cubed
  • 0.5 (14 ounce) can coconut milk
  • 0.5 teaspoon brown sugar
  • 0.5 teaspoon hot chile paste
  • 1 pinch cayenne pepper
  • 0.75 teaspoon ground turmeric
  • 0.5 cup chopped cilantro
Instructions:
  • In a large skillet over medium heat, heat vegetable oil. Add cumin seeds and cook until fragrant and popping. Add chopped onion and cook until soft and translucent, about 3-4 minutes.
  • Combine tomato paste and water in a bowl, then transfer to a skillet. Mix in chicken and cook until firm and white, around 5 minutes. Stir in coconut milk, brown sugar, chile paste, cayenne pepper, turmeric, salt, and pepper.
  • Simmer the mixture until the chicken is tender and no longer pink in the center, for about 15 minutes on medium-low heat. Garnish with chopped cilantro before serving.
